This is a fruity, spicy slice that will have you coming back for more.
225g Bread (no crusts)
1/2 pint Milk
170g Mixed Fruit
60g Soft Brown Sugar
60g Suet
2 tsp Mixed Spice
1 Egg (large)
Nutmeg and Sugar to dust
- Break the bread into chunks and soak in a bowl with the milk for 30 minutes
- After 30 minutes beat the bread to a smooth paste
- Add the fruit, sugar, suet, spice and egg and mix well
- Pour into a brownie tin (approx 20cm x30cm) and dust with a little ground nutmeg
- Bake in a preheated oven at Gas 4/180 C/350 F for 1-1 1/2 hours until nicely browned on top.
- Cool in the tin, sprinkle with sugar
- Once cool, cut into squares and tuck in.
I've never tried this ! I didn't realise until a few years ago that bread pudding and bread and butter pudding were different things *blushes*
